TORTA SBRISOLONA

Sbrisolona

This sweet that is much like a tart, was given to me by one of my cousins. 

It is so good that once you take the first bite and taste it you cannot stop eating it.

It’s typical of Mantova in Lombardy. The original recipe use lard and butter, but I put the margarine and I must say that the results was truly extraordinary.

Ingredients: 500 g cake

flour 250 g
sugar 200 g
ground almonds (10 almonds)
200 g butter or margarine
2 eggs
1 teaspoon baking powder vanilla
apricot jam (or to your taste also if Orange was great)

Instruction
Put the margarine in a small saucepan and let it melt.
 
Meanwhile in a large saucepan put the flour, sugar, baking powder and vanilla and stir the mixture with your hands and with a wooden spoon.
When the margarine cool a bit add it to in the large saucepan and add the eggs.
 
Mix everything together with your hands!!!
The mixture will 'be hard enough, that is expected and a good sign you are doing well.
 
Take a round baking pan 24 cm and slant of most 'half' of the dough and begin to drop the batter like rain (in small grain) into the pan, if necessary shaping it being careful not to crush too much with your hands.
 
Take the jam, put it in a bowl, and add a little 'hot water, mix it with jam and then add the ground almonds.
 
At this point, put the jam over the cake without flatten with the spoon.
 
Take the remaining dough and drop it always like rain on top of the jam.
Add on top of the sugar granules and almonds.

Put on a pre-heated hoven to bake at 200 degrees for 35 minutes.
