TERRINE WITH PORCINI MUSHROOMS AND BACON

Ingredients

1 KG of porcini mushrooms
300 grams of breadcrumbs
2-3 eggs
200 ml of milk
100 grams of grated Parmesan cheese
150 gr bacon slices
40 grams of butter

garlic to taste
parsley to taste
1 onion
sage to taste
rosemary to taste
salt and pepper to taste
 

1) Clean the mushrooms; remove the stem and the earthy side chapels clean with a cloth or brush, cut into chunks.
2) Take the crumb of the bread and place in a bowl and pour the milk over.
3) Important step: The crumb of bread you use is very important for the dough; prefer white bread, having carefully removed the crust.
4) Take the onion and cut it in small slices and sauté in a pan with 30g of butter, a clove of garlic, crushed and peeled a few leaves of sage and rosemary.
5) At this point add the mushrooms to the socket and brown over high heat for about ten minutes.
6 )Second important step: cook the mushrooms just for few minutes as they lose their flavor if cooked too much.
7) Add salt and pepper, remove the garlic. Preheat oven to 190 C. Squeeze the crumb of the bread from the milk and put it back in another bowl, add the cooked mushrooms, eggs, Parmesan cheese, parsley, salt and pepper.
8) Stir until mixture is smooth.
9) Third important step: the number of eggs may vary, start with two and if the mixture is too thick add the third egg.
10) Line a loaf pan of the capacity of 1 liter with baking paper, wet and wrung out, and coat with the bacon slices, overlapping a bit' at the base and leaving overhang from the mold.
11) Fourth important step: the slices of bacon should not be too thin, place them along the sides of the mold, starting from the center and leaving overhang.
12) Fill the mold with the mixture of mushrooms in large spoonfuls, taking care not to dislodge the bacon. Leveled the mixture and fold the slices of bacon inside the mold.
13) Put the mold in the oven and bake for at least 30 minutes.
14) Take it out and let rest for 10 minutes, then lift it by holding the paper and move it gently on a serving dish.

Cut into slices and serve with slices of toasted bread and a drizzle of olive oil.
